Espresso, cardamom and rose, and oat milk, this one has been the star of the year. We thought this would have been a cold weather only drink, but its the most popular espresso by bar even in the summer. Order this hot or iced.
As far as Matcha goes, Aiya Organic Ceremonial grade is where its at. Tasting notes are fruity pebbles cereal milk, and subtle floral notes. The best part is its only Matcha, lavender, an organic cane sugar simple syrup. Try it! you wont be dissapointed.

Nariño is a Colombian washed coffee, very traditional
Pink Bourbon is a semi-washed single origin light roast similar to the Narino but with slight fruity tasting notes
Guava Banana is an anaerobic natural coffee that is super fruit forward and a fan favorite. Super enjoyable on those hot summer days!

Grown by Ecoterra in Colombia’s Nariño, this coffee is from farms at 1,800 to 2,100 meters. The microclimate, with 20ºC average temperature supports organic growth. Nariño has some of the world's highest-grown coffee. Its high altitude and equatorial climate ensure slow maturation and rich flavor. Coffee cherries are depulped, fermented, washed, and dried traditionally.
Tasting notes: Caramel, Black Cherry, Grape, Plum, Honey
Planalto in Bahia is known for fully washed coffee processed in fermentation tanks, combining unique terroir and refined practices.
Jazblu Peaberry from Planalto is handpicked, pulped, fermented, and sundried. Peaberries, a genetic mutation, are smaller, denser, and rounder.
This NY 2/3 quality coffee ensures minimal defects, guaranteeing high cup quality and flavor.
Tasting notes: Dark Chocolate, Dried Fruit, Black Currant, Molasses
In the fertile hills of Huila, Colombia, the Pink Bourbon coffee variety emerged from a cross between Red and Yellow Bourbon. Grown in rich volcanic soil at optimal altitudes, this coffee is celebrated for its sweet caramel, delicate floral, and tropical fruit notes. Its resilience to diverse microclimates and varying altitudes has made it a favorite among local farmers. Today, Pink Bourbon flourishes in Huila,
Tasting notes: Citric acid, floral, green apple, green tea, tangerine.
This Red & Yellow Caturra is one of the flagship coffees produced at El Vergel Estate by Elias and Shady Bayter, located in the microlot next to the washing station, and surrounded by Guava trees, this coffee profile has been one of the most intense and fruity coffees developed by the estate.
Tasting notes: Chocolate, plum, guava, red fruits, citric acid, tangerine.

Bettina brings her expertise in logistics and operations, ensuring smooth functioning of Theorycraft, while David, with 8 years of home espresso experience, 1 year operating Theorycraft, and 2 years at a local specialty coffee shop, is our talented barista and cart operator. Together, they are dedicated to crafting an exceptional coffee experience for you to savor.
